Food looks tight, also looks like a lot of people for that small kitchen. Gotta love the Beard house, limited refrigeration but decent equipment since most chefs that go there end up leaving smallwares behind. At least you guys aren’t far, when we went we had over 30 boxes and a $12,000 fed ex bill.
Julie: it was really cool. Sometimes, though, I do miss going up to that pig that smelled like maple syrup and givin her a good scratch!
Chris: Wow; 12 large on shippin is ridiculous. Good thing Todd can foot that bill. We were in and out in like 3 and a half hours; much faster than I expected. There were 2 extra people there who aren’t normally part of our crew, so we were squeezed even more than we should have been in that tiny place. sweet globe wallpaper though!!
Great looking food! Is that a maraschino cherry on top of the pineapple dessert and maraschino cherry fluid gel? What kind of gougeres are those topped with roe?
sup david?! Yea its cherry juice encapsulated orb style; reverse encap., and a cherry gel. the gougeres are pumpernickel. They have a smoked salmon mousse piped into em with the isi. Hey if i need some slate plates, like 20, could you do it? email me millerino -at- gmail -dot- com. and let me know cost and size, etc… We just shot 4 dishes today for starchefs, so keep an eye out on the site.
everything looks awesome. congrats on the dinner oppurtunity. have you heard from paul in rochester? shoot me an email and tell me where the restaurant you are working at is i would like to follow what is going on there.
